Effervescent point Effervescent points are a modern innovation, which act to improve presentation and the longevity of the fizz. The best champagne flutes have laser etched effervescent points on the inside base of the bowl. In Zwiesel glasses, these will appear as a discrete cluster of up to six white dots. They are discrete so they do not detract from the appearance of the glass. These points encourage the gas to separate out at the base of the bowl, then spiral upwards through the full length of the wine in the glass. Consequently, they enhance presentation and have the added benefit of prolonging the lifespan of the fizz. (The deeper the bubble forms the more buoyancy is required to overcome the pressure of the liquid – so the fizz is contained for longer).
Understanding the sparkle Gas behaves in a fluid in a similar way to how fluid behaves in a gas. For example: rain drops form when water vapour coalesces around specks of dust. Once the water has acquired enough wait, it will fall as a rain droplet. In a similar way, gas in a wine will coalesce out of the liquid, by using rough surfaces or particles to concentrate on. When it has acquired enough buoyancy, it will float up through the liquid.
This means if you see a filled champagne glass with bubbles all over the inside of the bowl – it is a sign the glass was dusty before the wine was poured!
