Glass Conscious For most chefs and wine connoisseurs there’s simply no contest - if you take wine seriously then you serve it in a Riedel glass. Most of you are, I imagine, well acquainted with the thinking behind Riedel glasses. It is that the shape of the glass affects the bouquet, the taste, balance and finish of the wine. It was Professor Claus Riedel, a scion of the ancient Austrian crystal-making dynasty, who first developed this notion back in the fifties. He discovered that different styles of wine required a specific shapeof glass to be most fully appreciated. The explanation depents upon the idea of the "tongue map" the discovery that certain aromas and flavours are more sensitively appreciated by certain areas of the tongue. This may sound fanciful, but if you’ve ever tasted (as I have)an identical wine served out of several different glasses, it doesn’t take long before you’re marvelling at how shape can so strongly alter the taste.Lucia Van Der Post |
