Using a decanter allows for aeration of the wine, stimulating the fluid in a similar way to the swirling of a wine glass, it stimulates the molecules into movement which triggers the release of many more aroma compounds.

The decanter is said to smoothen the taste of the wine without oxidising it, and often helps to remove the harsh taste from some of the less delicate wines out there.
